We are a family run business and have been offering restaurant quality food at festivals for over 13 years. We operate a Fair Trade policy and pursue improvement rather than exploitation of people and environments. Therefore, we use goods that support this, such as Café Direct Coffee, teas and hot chocolate. We only used biodegradable cutlery and paper products and recycle cardboard and tin waste. We are 90% GM free (and working on the final 10%!). Our vehicles run off biodiesel wherever possible. (There is a depot 3 miles from our base).

The basic ingredients of Mexican cooking are colourful & healthy with a strong emphasis on pulses & fresh vegetables. Tortilla was the name given by the Spaniards to the flat corn pancakes eaten by the Indians in Mexico, traditionally patted by hand with patience and rhythm and never eaten cold. Beans are among the most popular dishes in Mexico and together with Maize & Chillis they make a happy trio satisfying daily protein, carbohydrate and vitamin requirements.
